Do you ever feel hungry at weird times of the day? I have those moments. I don’t need to eat much but I gotta get something down my throat as soon as possible otherwise I turn into “an unbearable to be around monster”!
Finely chop parsley (including the stems) and place it in a bowl. Pour over extra virgin olive oil and freshly squeezed lemon juice. Mix well.
Spread the parsley sauce over the toasts, top with tomato and avocado slices. Finish with 1-2 bacon slices (that you have fried, of course) or dry cured Spanish sausage – Fuet.
Serve for breakfast, lunch or anytime you like!
