Bacon Red Bean Salad

Bacon red bean salad is a simple, yet delicious side made with easy to get ingredients! It’s quick to make and perfect for picnics or entertaining at home!

Ingredients

  • 2 cups Cooked Red Beans (200g)
  • 2 Apples , diced
  • 1 cup Cooked Bacon (200g)
  • 1 cup Leek (100g)
  • ½ cup Sour Cream (125g)
  • ½ cup Mayonnaise (125g)
  • ½ Medium Lemon
  • 1/8 cup Cilantro (10g)
  • Salt & Pepper to taste

Instructions

  • In a bowl combine diced apples, cooked bacon cut into small pieces/strips and sliced leek.
  • Mix together mayonnaise, sour cream, finely chopped cilantro, salt and lemon juice. Pour this over the salad and mix until well combined.
  • Chill in the fridge at least 20-30 minutes before serving.
  • Enjoy!
