Guys, what do you think about split peas? Do you like this legume? Up until recently we had been making split peas soup only! But one day when I was going through the cupboards looking for inspiration on what to cook, I noticed split peas sitting in the very corner of one of the cupboards. So I figured it was the highest time to use it somehow. The question was how?

At that moment I wasnโ€™t very worried about this, I was sure I would figure this out the following day, after pre-soaking and cooking. Normally I would check the Internet to find some inspiration, but all I wanted was to use the ingredients that we had in the fridge/pantry.

Of course I was after something new, easy, delicious and filling. And that was when the butter roasted split pea power bowl was born! Avocado, thinly sliced smoked salmon, feta cheese and a drizzle of lemon juice and voila!

Ok. It went like this:
Me thinking: What will make the split peas taste amazing?
Me answering (in my head): hmmm, butterโ€ฆyes. BUTTER. Parsley, maybe???

Already an idea in my head, I melt the butter in a pan. Throw in the drained split peas. Roast it for only a few minutes before adding coarsely chopped parsley. Quick tastingโ€ฆHmm, yes, this tastes almost perfect. A squeeze of lemon juice over, give it a stir andโ€ฆyes, thatโ€™s it. Perfect!

Now you see how easy it is to make butter roasted split peas? When ready transfer into bowl(s) and top with avocado, feta cheese & smoked salmon.

Ingredients

  • 1 cup Split Peas
  • 1 Large Ripe Avocado
  • 80 g Smoked Salmon (2.8oz)
  • 60 g Feta Cheese (2oz)
  • 30 g Unsalted Butter (1oz)
  • A Handful of Fresh Flat Leaf Parsley
  • A Squeeze of Lemon (optional)
  • Salt to Taste

Instructions 

  • Soak split peas in cold water overnight in order to reduce the cooking time. (Apparently itโ€™s not necessary but I do it anyway).
  • Now drain the soaked peas, transfer back into a pot and pour 3 cups of water in. Bring to the boil, reduce the heat and simmer for 20 minutes. Drain the water.
  • In a frying pan, melt the butter over a medium heat. Throw in drained split peas. Increase the heat and roast for 3 minutes, stirring occasionally. Add roughly chopped parsley. Roast for a further 2 โ€“ 3 minutes before turning off the heat.
  • For the toppings: Wash & peel the avocado. Remove the stone and cut into slices/cubes. Slice smoked salmon, crumble/dice feta cheese.
  • Divide all the ingredients in 2 bowl and serve warm or cold!
