Do I need any specific tools?
Not really. All you need is a bowl or a resealable plastic bag large enough to hold all the chicken with marinade (use at least a 3-quart/3-liter bag). Plus, oven or grill or an air fryer. Either of these three
I use kitchen tongs to take the meat out, but a fork will do as well.
You don’t even need a chopping board or knife!
Useful tips:
- Olive oil – I used extra virgin olive oil but feel free to use regular cooking olive oil. Vegetable oils will also work just fine.
- Beer – Coors, Budweiser or any light beer are the best options here.
- Mustard – Use anything you like or have on hand.
- Chicken – Thighs with skin and bone will give you the best results. Other alternatives are skinless or skinless and boneless but might dry out faster and cooking time may be different. Always remember, the thicker the meat the longer its cooking time.
- Black pepper and cayenne – You can use as much or as little as you like.

Yes, it is. Beer tenderizes the meat. I recommend using pilsner, pale ale, or light lager.
For best results keep the chicken in this marinade overnight. If you are stuck for time but still make this beer marinade, count with at least 6 hours. The more the thighs rest in the marinade, the more tender the meat.

Beer Marinated Chicken
Ingredients
- 1/3 cup oil , see note 1
- 1 cup light beer (250 milliliters), see note 2
- 5 garlic cloves (pressed)
- 5 tablespoons dijon mustard , see note 3
- 2 teaspoons dried rosemary (finely chopped)
- 2 teaspoons salt
- ¼ teaspoon black pepper
- ½ teaspoon cayenne pepper
- 2 tablespoons sugar
- 2.5 pounds chicken thighs (bone in, skin on) (1.1 kilo)
Instructions
- In a large bowl or resealable plastic bag combine all the ingredients apart from the chicken. Mix well.
- Add chicken thighs, cover with plastic wrap (when using a bowl) and refrigerate for 6+ hours or overnight.
- Bake in a preheated oven skin side up at 400 Fahrenheit/200 Celsius for 30 minutes or until ready. Or, in an air fryer skin side up at 400 Fahrenheit/200 Celsius for 15 minutes. Or grill (skin side down) until cooked through. In all cases, if not sure check a food thermometer for doneness, see note 4.
