Banana Toast with Ricotta and Chocolate

Banana toast with ricotta and chocolate is a creamy, crunchy, naturally sweet breakfast or snack, ready in minutes and perfect for busy mornings.

Easily customizable to oneโ€™s liking, this energy-packed banana breakfast is also a good option for an afternoon snack.

How to make banana toast

Shopping list:

  • Ricotta โ€“ An Italian cheese rich in protein. A possible alternative is a mild cottage cheese. I prefer ricotta, though.
  • Bananas โ€“ 1 banana should be plenty for 2 toasts.
  • Dark chocolate โ€“ My favorite is the one with 70% cocoa content because it is also good for you. But you can use another kind โ€“ whatever you prefer.
  • Honey โ€“ You can substitute with agave syrup or maple syrup.
  • Seeds โ€“ This is optional but recommended. I used mixed seeds (pumpkin and sunflower), but you can also use other kids. If you use chia, I suggest mixing it together with ricotta. Nuts can be used as an alternative to seeds.
  • Toast bread โ€“ Whole wheat (preferably) or white.

Tools you will need:

  • Toaster โ€“ If you donโ€™t have one, you can dry-toast your bread in a skillet/frying pan or in the oven.
  • Knife and cutting board โ€“ You can get away without using these if you use a fork to slice the banana.
  • Microwave โ€“ Or a saucepan and heatproof bowl to melt the chocolate on the stove.
  • Spatula โ€“ For mixing the chocolate.
  • Small bowl & spoon or fork โ€“ A soup bowl or a small mixing bowl will do.

Toast the bread. Melt the chocolate. Mix ricotta with honey. Slice the bananas.

Assembling banana on toast: Use melted chocolate as a spread. This is followed by a ricotta & honey mixture, bananas and seeds. Grate some chocolate over if you feel like it and you will be done.

This is one of my favorite breakfast recipes that are good for you alongside with Greek yogurt breakfast bowl and mango overnight oats. It is also a good snack option before going to the gym.

What can I use instead of chocolate?

Use chocolate hazelnut spread instead of melted chocolate. Peanut butter is another option, but I prefer the hazelnut spread’s sweetness to peanut butter’s saltiness.

What can I serve with banana toast?

If you are not a coffee drinker, try orange or green juice. If you like coffee but also like trying new things, I have a recipe for a blueberry coffee smoothie. I like it, especially during the summer months.

Can I make it ahead?

Not really. This breakfast toast is ready in less than 10 minutes, so itโ€™s best made from fresh. If you are making only one slice of bread, then you should not need more than 5 minutes!

Ingredients

  • 4 slices toast bread (see note 1)
  • 2 ounces dark chocolate (70% cocoa content, 60 grams), see note 2
  • 1 cup ricotta (250 grams), see note 3
  • 2 teaspoons honey or to taste
  • 2 bananas (sliced)
  • 4 teaspoons mixed seeds , see note 4

Instructions 

  • Toast the bread to your liking.
  • Meanwhile, melt the chocolate in a microwave (or in a bowl over a pot of simmering water). Mix ricotta with honey.
  • Spread melted chocolate over each toast, top with sweetened ricotta, sliced banana and seeds.

Notes

  1. You can use either white or whole-wheat bread.
  2. You can use chocolate with less cocoa content. Or substitute with chocolate hazelnut spread.
  3. Ricotta can be substituted with cottage cheese. If you use cottage cheese, I recommend whipping it with honey.
  4. Seeds can be substituted with nuts (hazelnuts, walnuts or pecans are tasty options).
  5. Optional: top with chocolate shavings.
  6. You can easily scale this down to 1 portion if you like.
  7. Instead of melting dark chocolate, you can grate it over the toast.

  3. What lovely pictures of your banana toast! That’s a nice balance of creamy, fruity, chocolatey, and sweet. I like all the ideas you have for variations on the theme too. I think I’ll go for a bit of almond butter on top (I sometime have issues with seeds) but first I have to get to the store and buy more bananas. We eat them like mad around here. :)
